Mix all dry ingredients in a medium-sized mixing bowl: 1 cup regular oats, 3/4 cup whole wheat flour, 1.5 teaspoons aluminum free baking powder, 1 teaspoon cinnamon, and 1/4 teaspoon salt.
In a separate bowl, prepare the wet ingredients: crack 1 egg on the counter, separating the egg white from the yolk, and add 1 teaspoon of vanilla extract and 1/4 cup of creamy almond butter.
Add sweeteners: 1/4 cup of maple syrup and 1/4 cup of honey, mixing until completely incorporated.
Stir in 1/4 cup of dark chocolate chips, mixing well.
Chill the dough in the refrigerator for 20 minutes to prevent stickiness.
Preheat the oven to 325°F (163°C) and line a baking sheet with a silicone liner.
Using a small cookie scoop, drop the cookie dough onto the baking sheet, flattening each cookie slightly with your hand (spray with coconut oil if sticky).
Bake for 11 minutes, pulling them out when they look barely done and slightly shiny on top.
Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack or serving platter.
