Instant Pot Dublin Coddle - Irish Potato, Sausage, and Bacon Stew

Originating from Dublin, Coddle is a traditional Irish dish that reflects the resourcefulness of Irish households, utilizing leftover ingredients like sausages and bacon. Instructions
- 1Preheat the oven to 350°F.
- 2In a large skillet, cook the pork sausages over medium heat until browned on all sides.
- 3Remove the sausages and set aside, leaving the drippings in the skillet.
- 4Add the bacon to the skillet and cook until crispy, then remove and set aside.
- 5In the same skillet, add sliced onions and cook until softened, about 5 minutes.
- 6Layer half of the sliced potatoes in a large oven-safe pot.
- 7Add half of the cooked bacon and onions on top of the potatoes.
- 8Layer the carrots and remaining potatoes over the bacon and onions.
- 9Place the browned sausages on top of the vegetables.
- 10Pour the chicken broth over the layers, ensuring the vegetables are mostly covered.
- 11Add bay leaves, thyme, black pepper, and salt to the pot.
- 12Cover the pot and bake in the preheated oven for 1.5 to 2 hours.
- 13Check occasionally and add more broth if necessary to keep the vegetables submerged.
- 14Once cooked, remove from the oven and let rest for 10 minutes.
- 15Garnish with chopped parsley before serving.

- ●1 tsp baking soda
- ●1/2 tsp salt
- ●1 cup buttermilk
- ●1/4 cup unsalted butter, melted
- ●1/4 cup sugar
- ●1/2 cup raisins (optional)
Instructions
- 1Preheat your oven to 425°F (220°C).
- 2In a large mixing bowl, combine the flour, baking soda, and salt.
- 3In a separate bowl, mix the melted butter and sugar until well combined.
- 4Add the buttermilk to the butter mixture and stir until smooth.
- 5Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the raisins.
- 6Turn the dough out onto a floured surface and knead gently for about 1 minute until it comes together.
- 7Pat the dough into a 1-inch thick round and cut into wedges or use a biscuit cutter to cut out rounds.
- 8Place the biscuits on a baking sheet lined with parchment paper, leaving space between each.
- 9Bake in the preheated oven for 15-20 minutes or until golden brown.
- 10Remove from the oven and let cool slightly before serving.
