Ingredients

  • 2 large plantains
  • 1/2 cup grated coconut
  • 1/4 cup chopped onions
  • 2 green chilies, chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt
  • 1 tbsp lime juice
  • 1 tbsp oil
  • 1/4 cup chopped cilantro

Instructions

  1. 1Peel the plantains and cut the skins into thin strips.
  2. 2In a pan, heat the oil over medium heat and sauté the chopped onions until translucent.
  3. 3Add the green chilies and sauté for another minute.
  4. 4Stir in the plantain skins and cook for about 5 minutes, stirring occasionally.
  5. 5Add the grated coconut, turmeric powder, and salt to the pan, mixing well.
  6. 6Cover the pan and let it cook for another 5-7 minutes until the plantain skins are tender.
  7. 7Remove from heat and stir in the lime juice and chopped cilantro.
  8. 8Serve warm as a side dish.

  • 4 ripe plantains
  • 1 cup vegetable oil
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. 1Peel the plantains and slice them thinly using a mandoline or a sharp knife.
  2. 2In a large bowl, toss the plantain slices with salt, paprika, garlic powder, and cayenne pepper until evenly coated.
  3. 3Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 350°F (175°C).
  4. 4Carefully add the plantain slices in batches to the hot oil, making sure not to overcrowd the pan.
  5. 5Fry the plantains for about 2-3 minutes or until they are golden brown and crispy, flipping them halfway through.
  6. 6Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
  7. 7Repeat the frying process with the remaining plantain slices.
  8. 8Allow the chips to cool completely; they will become crispier as they cool.
  9. 9Serve the crispy ash plantain chips as a snack or appetizer.
