Ingredients
- ●2 large plantains
- ●1/2 cup grated coconut
- ●1/4 cup chopped onions
- ●2 green chilies, chopped
- ●1/2 tsp turmeric powder
- ●1/2 tsp salt
- ●1 tbsp lime juice
- ●1 tbsp oil
- ●1/4 cup chopped cilantro
Instructions
- 1Peel the plantains and cut the skins into thin strips.
- 2In a pan, heat the oil over medium heat and sauté the chopped onions until translucent.
- 3Add the green chilies and sauté for another minute.
- 4Stir in the plantain skins and cook for about 5 minutes, stirring occasionally.
- 5Add the grated coconut, turmeric powder, and salt to the pan, mixing well.
- 6Cover the pan and let it cook for another 5-7 minutes until the plantain skins are tender.
- 7Remove from heat and stir in the lime juice and chopped cilantro.
- 8Serve warm as a side dish.

- ●1/2 tsp paprika
- ●1/2 tsp garlic powder
- ●1/4 tsp cayenne pepper (optional)
Instructions
- 1Peel the plantains and slice them thinly using a mandoline or a sharp knife.
- 2In a large bowl, toss the plantain slices with salt, paprika, garlic powder, and cayenne pepper until evenly coated.
- 3Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 350°F (175°C).
- 4Carefully add the plantain slices in batches to the hot oil, making sure not to overcrowd the pan.
- 5Fry the plantains for about 2-3 minutes or until they are golden brown and crispy, flipping them halfway through.
- 6Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
- 7Repeat the frying process with the remaining plantain slices.
- 8Allow the chips to cool completely; they will become crispier as they cool.
- 9Serve the crispy ash plantain chips as a snack or appetizer.
