1/4 cup white parts of green onions
1 cup neutral oil
1/4 cup water

In a mixing bowl, combine 350 g of ground pork, 1 tbsp of soy sauce, a pinch of sugar, salt, pepper, and 1 tbsp of Shaoxing wine. Mix well.

Thinly slice a generous amount of green onions, separating the white parts for stir-frying and the green parts for garnish.

Smash 3 cloves of garlic and finely chop them. Finely chop a small knob of ginger.

Cut baby bok choy in half or quarters lengthwise depending on size. Blanch in boiling water.

Toast Sichuan peppercorns in a dry pan for 1-2 minutes, then grind them up.

In a small container, mix 1.5 tbsp of soy sauce, 0.5 tsp of dark soy sauce, 2 tbsp of sesame paste, 0.5 tbsp of chicken bouillon powder, 1 tbsp of vinegar, 1 tsp of sugar, 1 tsp of Sichuan peppercorn powder, and 2 tbsp of homemade chili oil until well combined.

Add a pinch of MSG to the sauce if desired.

In a wok or pan, heat 1 tbsp of oil over medium-high heat. Add the marinated pork and break it up with a spatula as it cooks.

Once the pork is no longer pink, add the white parts of the green onions, garlic, ginger, and 1/4 cup of yachi fermented mustard greens. Sauté for about 3 minutes.

Remove the pork mixture from the pan and set aside.

Cook the frozen Chinese wheat noodles according to package instructions.

While the noodles cook, blend the blanched bok choy for 30 seconds to 1 minute and set aside.

Once the noodles are cooked, combine half of the sauce with 1/4 cup of the noodle cooking water in a bowl.

Add the cooked noodles to the bowl and mix until well combined.

Arrange the noodles nicely in the bowl, then top with the pork mixture and the blended bok choy.

Add extra chili oil or Sichuan peppercorn powder to taste, and finish with the green parts of the green onions.
