Chop the onion and add it to a bowl.
Chop the feta cheese and add it to the bowl.
Add 312 grams of roughly chopped spinach to the bowl.
Add 1 teaspoon of red pepper flakes to the mixture and combine.
Prepare phyllo dough by mixing 4 cups of flour with salt and 1 egg.
Add water gradually until a dough forms, knead until smooth.
Roll the dough into 10 separate pieces and flatten them.
Stack five pieces of dough on a plate and refrigerate for 10 minutes.
Roll out the first stack of pastry sheets and place in a buttered cast iron skillet.
Add the filling to the pastry in the skillet.
Roll out the second stack of pastry sheets to cover the filling and crimp the edges.
Mix a small egg and brush it on top of the pastry.
Bake at 356°F until golden brown, approximately 38 minutes.
