Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).

In a large bowl, combine 1.25 cups cornmeal, 1.25 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, and 1/4 teaspoon salt.

In another bowl, mix together 1 large egg, 1/4 cup oil, and 1.25 cups buttermilk.

Combine the wet ingredients with the dry ingredients until just mixed, being careful not to overmix.

Let the batter sit for 5 minutes.

Spread the thick batter into the greased skillet.

Bake for 25 to 30 minutes, or until a toothpick comes out clean and the center reads between 200 to 210 degrees Fahrenheit (93 to 99 degrees Celsius).
