Skillet Cornbread

1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
2 large eggs
1/4 cup unsalted butter, melted
1/2 cup corn kernels (optional)

Preheat your oven to 425°F (220°C).

In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.

In another bowl, whisk together the milk, eggs, and melted butter until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the corn kernels.

Heat a cast-iron skillet over medium heat and add a little butter to coat the bottom.

Pour the cornbread batter into the hot skillet, spreading it evenly.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
