Wash the potatoes thoroughly to ensure they are clean.
Wrap each potato in aluminum foil.
Preheat the oven to 400°F (200°C).
Place the wrapped potatoes in the oven and bake for about 1 hour.
While the potatoes are baking, cut the bacon into small pieces and cook it on the stove until crispy.
Remove the bacon from the pan and set it aside.
After 1 hour, take the potatoes out of the oven and let them cool for a few minutes.
Slice each potato in half and scoop out some of the flesh, leaving a small amount inside.
In a bowl, mix the scooped potato flesh with sour cream, salt, and black pepper, ensuring it remains slightly chunky.
Add the cooked bacon to the mixture and stir to combine.
Add shredded cheddar cheese to the mixture and stir until well combined.
Spoon the mixture back into each potato skin, packing it in as needed.
Spray the tops of the filled potato skins with butter spray.
Return the filled potato skins to the oven and bake for an additional 10-15 minutes until heated through and the tops are golden.
After baking, remove the potato skins from the oven and add a dollop of sour cream on top of each before serving.
