Als erstes wird der Rotkohl geviertelt.
Dann den Strunk keilförmig rausschneiden.
Nun lassen sich die äußeren Blätter ganz leicht entfernen.
Bei größeren Köpfen empfehle ich das Viertel zu teilen, also in die äußeren Blätter und das Herzteil.
Das Herzteil in dünne Streifen schneiden.
Die Blätter längs teilen damit die Streifen nicht zu lang werden und dann ebenfalls in dünne Streifen schneiden.
Die Zwiebel fein würfeln.
Die Äpfel schälen, entkernen und kleinschneiden. Wer keine Apfelstücke mag, kann den Kohl auch grob reiben.
Das Wasser in den Topf gießen, aber nur soviel das der Kohl nicht anbrennt.
Zucker, Salz, Lorbeer, Piment, Nelken, Essig und Schmalz dazugeben und alles umrühren.
Den Rotkohl aufkochen und bei mittlerer Hitze etwa 45 bis 60 min fertig garen.
Um den Kohl anzudicken, werden kurz vor Ende der Garzeit die Kartoffeln geschält, fein gerieben und untergerührt.
