Gluten-Free Muffins

3 eggs
⅔ cup milk or half plain greek yogurt and water
1/2 cup butter
¼ cup almond flour
1 ¾ cups gluten free flour mix
1 cup grated cheddar cheese
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
¼ tsp cayenne pepper
1 tbsp sugar
dash of onion powder
dash of garlic powder

Preheat your oven to 350°F.

Melt the butter and let it cool.

Mix the eggs and the milk (or yogurt-water) very well.

Slowly pour the melted butter into the egg mixture while whisking vigorously.

Mix the dry ingredients together.

Prepare your muffin tin with silicone cups or paper cups or oil and flour the cups in the tin.

Briefly mix the liquid into the dry ingredients while stirring. Do not over mix. Add a bit of water if the mixture is too dry.

Put the mixture into the muffin cups, filling them appropriately.

Bake for 22 to 26 minutes, or until a toothpick comes out dry.

Let cool for 5 minutes, then remove the cups from the tin and let cool for another 20 minutes.
