Preheat the oven to 450°F (232°C).
Break down the cauliflower into small florets and rinse them, ensuring they are completely dry.
In a bowl, toss the cauliflower florets with about 1.5 to 2 teaspoons of olive oil and a little salt to coat them well.
Spread the cauliflower on a foil-covered baking pan, ensuring each piece is touching the foil for even roasting.
Roast the cauliflower in the oven for about 15 minutes, checking after 10 minutes and flipping the pieces to ensure even browning.
Remove the cauliflower from the oven once it is nicely caramelized and golden brown.
In a mixing bowl, combine Greek yogurt and balsamic vinegar, stirring to mix well.
Chop the bacon into small pieces and add it to the Greek yogurt mixture along with chopped fresh chives, stirring to combine.
Add the roasted cauliflower to the bowl and gently mix to coat the cauliflower with the yogurt mixture.
Transfer the mixture into an 8x8 baking dish and reduce the oven temperature to 375°F (190°C).
Top the casserole with mild cheddar cheese, adding as much as desired.
Bake in the oven for 20-25 minutes until everything is hot and the cheese is melted.
