Pesto Chicken

1 lb boneless chicken breast or thighs, cubed or sliced thin
4 tbsp olive oil, divided
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 cup pesto
4 cups potatoes, diced
1 zucchini or veggies of choice sliced, then halved
1 cup mozzarella cheese (optional)

Preheat oven to 400 degrees.

Toss cubed potatoes with 2 tbsp olive oil and season with salt & pepper.

Place potatoes on a baking sheet and bake for 15 minutes.

While potatoes are cooking, combine chicken, seasoning mix, remaining 2 tbsp olive oil, and pesto. Toss to coat.

Remove potatoes from the oven, toss potatoes and add the chicken to the pan.

Return to the oven for an additional 12 minutes.

Remove from the oven, toss and add zucchini.

Return to oven and bake for 5 minutes.

Broil for another 3 minutes. Chicken should have an internal temp of 165 degrees.

If using cheese, remove from the oven and sprinkle with mozzarella cheese.
