Rosca de Reyes

Cultural Context

Rosca de Reyes, or King's Cake, is a beloved tradition in Mexico, celebrated on January 6th during the Feast of the Epiphany. It symbolizes the arrival of the Three Wise Men and is often enjoyed with hot chocolate. Families and friends gather to share the cake, and the person who finds the figurine inside is expected to host a party on Candlemas Day. This festive treat has inspired many variations around the world, including the French Galette des Rois and the New Orleans King Cake, each with its own unique twist.

1

Warm up the milk.

2

Add yeast, a tablespoon of sugar, and a tablespoon of flour to the warm milk and mix.

3

Let the yeast mixture sit for 5 minutes until foamy.

4

Mix flour and sugar together in a bowl.

5

Add orange zest, eggs, yeast mixture, vanilla extract, and butter to the dry ingredients.

6

Mix all ingredients together at medium speed for about 10 minutes.

7

Knead the dough for an additional 5 minutes until it no longer sticks to your hands.

8

Place the dough in a bowl, cover it, and let it rise for 2 hours or until it doubles in size.

9

Prepare the sugar paste by mixing 5 tablespoons of powdered sugar, 4 tablespoons of shortening, and 5 tablespoons of wheat flour to form a small ball of dough.

10

Set aside the sugar paste for later use on top of the rosca.

11

Peel 2 grapefruits and cut them in half to squeeze out the juice.

12

Cut the grapefruit into strips and add them to boiling water to remove bitterness.

13

Rinse the grapefruit strips and repeat the boiling process 2 more times.

14

In another pan, heat 1 cup of sugar, 1 1/2 cups of water, and some cinnamon until it boils.

15

Add the grapefruit strips to the boiling mixture and stir for 10 minutes.

16

Divide the strips into three sections and add red and green food coloring to separate bowls for decoration.

17

Form the dough into an oval shape and coat it with an egg for a shiny finish.

18

Decorate the oval with candied fruit, figs, cherries, and the sugar paste you prepared earlier.

19

Sprinkle sugar on top of the decorated dough.

20

Bake at 350°F for 20-25 minutes until golden brown.

21

Add a figurine of sweet baby Jesus inside the rosca after baking.
