Combine almond flour with a little coconut flour and xanthan gum, whisk together and set aside.
Brown half a stick of grass-fed salted butter until it reaches a caramel color.
Add the other half of the cold butter to stop the cooking process.
Transfer the browned butter to a bowl and let it cool for 5 to 10 minutes.
Pour the cooled brown butter into the sugar mixture, scraping in all the bits.
Add 2 teaspoons of vanilla extract and 1 large egg to the mixture, whisk for a full minute until thick.
Fold the wet mixture into the dry ingredients until combined.
Chop the salted caramel milk chocolate bar into desired pieces and add it along with the milk chocolate style baking chips to the dough, folding everything together.
Scoop the cookie dough onto a silicon-lined baking sheet, pressing them down slightly before baking.
Bake the cookies, and after about 2 minutes, press them down with a fork if they haven't flattened.
Once baked, sprinkle with coarse sea salt and let cool completely before eating.
If impatient, place cookies in the freezer or refrigerator for a few minutes to cool faster.
