Citrus Marinated Snow Crab Tostadas

Originating from coastal Mexico, tostadas are a beloved dish featuring crispy tortillas topped with various ingredients. The use of citrus-marinated seafood reflects the region's abundant fresh seafood and vibrant flavors. Today, variations of tostadas can be found worldwide, showcasing local ingredients and culinary creativity.
Gather all the ingredients: 1 lb fresh snow crab legs, 2 limes, 2 oranges, a bunch of fresh cilantro, 1 small red onion, 2 jalapenos, 1 ripe avocado, 6 to 8 small corn tortillas, salt, and pepper.
In a bowl, squeeze the juice of 2 limes and 1 orange, add a handful of chopped cilantro, and a pinch of salt and pepper. Mix everything together.
Place the snow crab legs in the marinade and let them sit for about 15 minutes.
Finely chop the red onion and jalapenos, and dice the remaining lime and orange. Dice the avocado into small cubes.
Heat a skillet over medium heat and lightly toast each corn tortilla on both sides until they become slightly crispy. Remove them from the skillet and set aside.
Heat a grill pan or skillet over medium-high heat and place the marinated snow crab legs on it. Cook for about 3-4 minutes on each side until they turn golden.
Remove the crab legs from the heat and let them cool for a few minutes. Carefully remove the meat from the shells and roughly chop it into bite-sized pieces.
Take a toasted corn tortilla and spread a generous amount of diced avocado on top. Add a handful of the chopped marinated snow crab meat, and top with finely chopped red onion, jalapenos, and a squeeze of lime and orange juice. Garnish with fresh cilantro and a pinch of salt and pepper.
Repeat the process with the remaining tortillas and ingredients.
