Preheat oven to 350°F (175°C).
Grease and flour a baking pan.
Mix flour, baking powder, and salt in a bowl.
In another bowl, beat eggs and sugar until fluffy.
Add vanilla extract to the egg mixture and mix well.
Combine the dry ingredients with the wet ingredients until just mixed.
Pour the batter into the prepared pan and bake until a toothpick comes out clean, about 25-30 minutes.
Let the cake cool completely in the pan.
Whisk together whole milk, evaporated milk, and sweetened condensed milk in a bowl.
Poke holes all over the cooled cake with a fork.
Slowly pour the milk mixture over the cake, allowing it to soak in for at least 1 hour.
Whip heavy cream with powdered sugar until soft peaks form.
Spread whipped cream over the soaked cake and sprinkle with cinnamon and toasted coconut.
Garnish with fresh fruit if desired.
