Cultural Context

New York style bagels are a beloved staple of New York City cuisine, known for their chewy texture and shiny crust. They are often enjoyed with cream cheese, lox, or various toppings. The bagel's origins can be traced back to Eastern European Jewish immigrants, and they have become a symbol of New York's diverse culinary landscape. 1

The night before, make a sponge by mixing 1 cup of bread flour, 1 teaspoon of yeast, and 1 cup of water in a bowl.

2

Cover the sponge with plastic wrap and let it sit at room temperature until the next morning.

3

In the morning, add 1/2 cup of water, 1 tablespoon of brown sugar, 1 and 3/4 teaspoons of dry yeast, and 1 and 1/4 teaspoons of salt to the sponge.

4

Mix the ingredients in a stand mixer briefly before switching to a dough hook.

5

Gradually add in 3 cups of bread flour until the dough becomes too stiff for the mixer, then transfer it to a lightly floured surface.

6

Knead the dough by hand for about 3 minutes until it is smooth and stiff.

7

Oil a mixing bowl with butter, place the dough in it, and cover with plastic wrap. Let it rise for 60 to 90 minutes until doubled in size.

8

Punch down the risen dough and divide it into 8 equal pieces.

9

Roll each piece into a ball, then push your thumb through the center to create a hole, stretching it to at least 1 and 1/2 inches in diameter.

10

Place the shaped bagels on a parchment-lined baking sheet and cover with a towel while preheating the oven to 425°F.

11

Bring about 3 quarts of water to a boil, then reduce to a gentle boil and add 1/4 cup of honey.

12

Boil the bagels for 1 minute on each side, then place them on a rack to dry slightly.

13

Prepare an egg wash by mixing 1 egg white with 1 tablespoon of water and brush it over the bagels.

14

Sprinkle everything bagel seasoning on top of the bagels.

15

Transfer the bagels back to the parchment-lined baking sheets, ensuring they are not touching.

16

Bake the bagels in the preheated oven for about 20 minutes, rotating the pans halfway through.

17

Once baked, transfer the bagels to a cooling rack and let them cool for 20 minutes before serving.
