Sunflower seeds are often less expensive.
Add bread flour to a kitchen mixer.
Add sugar to the flour.
Add salt to the flour.
Add instant dried yeast to the flour, keeping it away from the salt.
Turn the mixer on to medium speed and drizzle in tepid water until fully incorporated.
Knead the dough for around 10 minutes, adding more flour little by little until the dough is dense and heavy.
If the dough isn't coming together, splash in a little water to help it combine.
Shape the dough roughly and coat it with olive oil in the mixing bowl.
Cover the bowl with cling wrap and a clean towel; let it proof for around 1 hour until doubled in size.
Turn the dough out onto a table and divide it into 8 equal pieces, each around 4 oz.
Shape each piece into a smooth ball without flour on the surface for traction.
Poke a hole through the middle of each ball and stretch it to create a bagel shape with a hole about 1.5 inches wide.
Cover the shaped bagels with cling wrap and a tea towel; let them rest for around 20 minutes.
Boil a large pot of water and ensure it is at a steady boil.
Carefully place 4 bagels at a time into the boiling water.
Boil each bagel for 2 minutes on one side, then flip and boil for another 2 minutes on the other side.
Remove the bagels with a slotted spoon and shake off excess water before placing them on a baking sheet lined with parchment paper.
Repeat boiling for the remaining bagels.
Prepare toppings by mixing dried onion, sesame seeds, black sesame seeds, and poppy seeds together.
Glaze each bagel and dip it into the seed mixture for toppings.
