Traditionally made with various flours, it reflects the culinary diversity of the islands, influenced by Indian and African cuisines. Today, vegan versions have gained popularity, allowing everyone to enjoy this delicious bread while adhering to plant-based diets.

Self-rising flour simplifies the recipe.
Start by slicing palm hearts and placing them in a bowl.
Slice orange and red peppers, and finely dice a yellow onion and green onions.
Saute the peppers and onions in a pan until cooked down.
Add three cloves of garlic and fresh thyme, then mix.
Add two chopped tomatoes to create a sauce and mix in the palm hearts.
Season with pink salt, nori sheets, and tamari, then garnish with fresh parsley.
For the roti, combine 2 cups of flour, brown sugar, baking powder, and pink salt in a bowl.
Add lukewarm water bit by bit to form a dough and let it sit.
Cut the dough into four pieces and roll each piece out.
Spread vegan butter on the dough and create layers by folding it.
Let the folded dough sit for 1-2 hours before rolling it out thin.
Cook the rolled roti in a pan until browned.
For the curry, slice carrots and potatoes, and finely dice a yellow onion.
Saute the onion, then add cumin, Madras powder, turmeric, paprika, and cayenne pepper.
Mix in pink salt, fresh ginger, and garlic, then add water to combine.
Add carrots and potatoes, mix well, then add chickpeas and tomato paste.
Pour in vegan vegetable stock, cover, and let it cook down.
Finish with fresh parsley.
