Pasta with Sun-Dried Tomato Pesto

1/2 pound Italian sausage
1 pound macaroni or pasta of choice
spinach

Boil water in a pot and heavily salt it.

In a pan, cook 1/2 pound of Italian sausage over medium heat, breaking it up as it cooks.

Once the sausage is cooked, add 1 pound of macaroni (or pasta of your choice) to the boiling water and stir.

After the pasta has cooked, add spinach to the pan with the sausage and wilt it using the fat from the sausage.

Turn the heat up and add about 1/2 cup of pasta water to the pan, then reduce the heat to low.

Add the sun-dried tomato pesto to the pan and stir to combine, making the sauce creamy.

Strain the pasta and add it to the sauce in the pan, tossing to coat the pasta in the sauce.

Increase the heat slightly and continue to toss the pasta in the sauce until well combined.
