Matcha Green Tea Cinnamon Swirl Bread

1 cup warm water
1 tbsp active dry yeast
1 tsp sugar for the yeast
3 to 3-1/4 cups bread flour
1/2 cup malted milk powder or regular milk powder
2 tbsp sugar
1/2 tsp salt
2 tbsp Matcha green tea powder
1 large egg
1 tsp vanilla extract
2 tbsp soften butter
2 tbsp black sesame seeds for topping
egg wash for brushing
1 cup date sugar
1/3 cup boiling water
2 tbsp melted coconut oil or butter
1/2 cup chopped walnuts

Mix all of the dry ingredients together including Matcha green tea powder.

Mix warm water, sugar, and yeast and let stand for 10 minutes.

In a mixer bowl, mix the yeast mixture and the flour mixture on low speed until the dough comes together. Then add vanilla and egg, and continue kneading for a few minutes with a dough hook attachment.

Increase speed to medium and knead for 8-10 minutes or until dough is smooth and elastic. (You may add 1-2 tbsp bread flour if needed. You may use more or less than 3 cups.)

Cover the dough and let rise for 1 hour in a warm place or until the dough doubles in size.

Turn dough onto a floured surface and roll dough out into a rectangle shape about 12" x 17".

Spread the date sugar filling evenly and leave 1" along the edges. Sprinkle with ground cinnamon if wanted. (I did not add cinnamon at this time.)

Roll dough into a cylinder shape starting at the short end tightly. Pinch the seam to seal, and tuck in the ends. (This will form an 11"-12" log.)

Place the log into a loaf pan 12 x 4.5" x 1.125" greased with baking spray (or 2 regular 9" x 5" sizes for making 2 loaves.). Cover and let rise for 45-60 minutes.

Brush the loaf with egg wash and sprinkle with black sesame seeds. Bake at 375 deg. For 40-45 minutes or until golden brown.

Let stand in its pan for 5-10 minutes before removing the bread out of the pan to a wire rack to cool completely.
