Sauté diced onion and bell pepper in olive oil until soft, about 3-4 minutes.
Add chopped spinach and cook until wilted, about 2 minutes.
In a bowl, whisk together eggs, milk, salt, and black pepper.
Spread the sautéed vegetables evenly over the pastry squares.
Pour the egg mixture over the vegetables, filling each tart.
Sprinkle cheese on top of each tart.
Add cooked bacon pieces on top of the cheese.
Bake in the preheated oven for 15-20 minutes, until the pastry is golden and the egg is set.
Remove from the oven and let cool slightly before serving.
