Peel the potatoes.
Thinly slice the potatoes.
Rinse the sliced potatoes in a bowl of water twice to remove starch.
Add ice cubes to the water and let the potatoes sit for about 10 minutes.
Remove the potatoes and pat them dry with a napkin.
Cook bacon in a skillet until crispy, then remove and place on a napkin to soak up oil.
In the same skillet, add 2 tablespoons of butter and allow it to melt.
Add minced garlic and cook for about 30 seconds until fragrant.
Add flour and cook for about 60 seconds to avoid a raw flour taste.
Add thinly diced onions and cook until translucent.
Pour in heavy cream and stir to combine.
Season with ground black pepper, nutmeg, Creole seasoning, and fresh rosemary and thyme, adjusting salt to taste.
Remove the rosemary and thyme from the mixture before adding cheese.
Stir in sliced cheese until melted.
Pour the cheese mixture over the potatoes in a baking dish.
Top with shredded cheddar cheese and chopped bacon.
Cover the dish and bake at 375°F for about 30 minutes.
