Pecorino is usually cheaper than aged parmesan.
Peel the potatoes and cut them thick.
Place the cut potatoes into a strainer.
Melt 2 tablespoons of Smart Balance butter in a pan over low heat.
Add 1/4 teaspoon of white pepper and 1/4 teaspoon of creole seasoning to the melted butter and stir.
Pour in 1/3 cup of half and half cream and stir to combine.
Add a chunk of 2% milk to the mixture.
Add 3 slices of white American cheese and 1/3 cup of mild cheddar cheese to the pan and stir until melted.
Taste the cheese sauce and add more creole seasoning if desired.
Bring the cheese sauce to a medium heat and let it come to a hard boil before removing from heat.
In a bowl, add half of a tablespoon of butter to the hot potatoes and toss to coat.
Spray a small square baking dish with Pam spray.
Pour the melted cheese sauce over the potatoes in the baking dish and toss to combine.
Add little globs of the remaining butter on top of the potato mixture.
Pour 1 teaspoon of milk over the top of the potatoes.
Bake in the oven for about 25 to 30 minutes until bubbly.
Check for fork tenderness of the potatoes after baking.
Garnish with chopped parsley before serving.
