Peel and thinly slice the potatoes.
Peel and thinly slice the onions.
Heat olive oil in a skillet over medium heat.
Add the onions and cook until caramelized, about 15-20 minutes, stirring occasionally.
Add minced garlic and thyme to the onions, cooking for an additional 2-3 minutes.
In a separate bowl, combine heavy cream, salt, black pepper, and nutmeg.
In a greased baking dish, layer half of the potatoes evenly across the bottom.
Spread half of the caramelized onion mixture over the potatoes.
Sprinkle half of the gruyere cheese over the onions.
Repeat the layering process with the remaining potatoes, onions, and cheese.
Pour the cream mixture evenly over the top layer.
Dot with butter and sprinkle with parmesan cheese.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
Let the dish rest for 10 minutes before serving.
