Eggplant Tagine

3 large eggplants
4 sweet peppers
4 garlic cloves
a small bunch of cilantro and parsley
1 tsp of salt
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp coriander seeds
1/2 tsp turmeric
1/4 tsp black pepper
1/4 cup of olive oil
1 tbsp lemon juice

Chop the eggplants and sweet peppers into bite-sized pieces.

Mince the garlic cloves and chop the cilantro and parsley.

In a large pot, heat the olive oil over medium heat.

Add the garlic, eggplants, and sweet peppers to the pot and sauté until softened.

Stir in the spices: salt, cumin, paprika, coriander seeds, turmeric, and black pepper.

Add the lemon juice and chopped herbs, mixing well.
