Eggplant Tagine

2 medium eggplants, diced
1 large onion, chopped
3 cloves garlic, minced
1 can (14 oz) chickpeas, drained and rinsed
2 medium tomatoes, chopped
1 red bell pepper, chopped
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp cinnamon
1/2 tsp paprika
1/4 tsp cayenne pepper
2 cups vegetable broth
2 tbsp olive oil
Salt and pepper to taste
Fresh cilantro for garnish

Heat olive oil in a large pot over medium heat.

Add chopped onion and garlic, sauté until onion is translucent.

Stir in diced eggplant and cook for about 5 minutes until slightly softened.

Add chopped tomatoes, red bell pepper, chickpeas, and all spices. Stir well to combine.

Pour in vegetable broth and bring to a simmer.

Cover and let it cook for about 25-30 minutes, stirring occasionally, until the eggplant is tender.

Season with salt and pepper to taste.

Remove from heat and let it sit for a few minutes before serving.
