Mix half a pound of farmer's cheese with one egg yolk and a little bit of salt, then set aside.

Divide the dough into two or three parts and roll out one part at a time on a floured surface to about 1/8 inch thick.

Place a tablespoon of filling in the center of each circle, then fold the dough over and pinch the edges to seal.
