Lemon-Poppy Seed Cake

200g Eggs (4 Eggs)
220g Sugar (1 3/4 cups Sugar)
120g Light cream (1/2 cup Light cream)
210g Flour (1 3/4 cups Flour)
5g Baking powder (1 tsp Baking powder)
80g Melted butter (6 TBSP Melted butter)
Zest of 1 lemon
60g Lemon juice (Juice from 2 lemons)
12g Poppy seeds (1 TBSP Poppy seeds)
100ml Water (1/2 Cup Water)
100g Sugar (3/4 Cup Sugar)
5g Poppy seeds (1 tsp Poppy seeds)

Preheat the oven to 170C.

Butter the sides of the cake tin and line the longer sides with baking/parchment paper.

Dust the shorter sides of the cake tin lightly with flour.

In a mixing bowl, combine eggs, sugar, light cream, flour, baking powder, melted butter, lemon zest, lemon juice, and poppy seeds to form a batter.

Pour the batter into the prepared cake tin.

Bake in the preheated oven for 30 minutes or until a skewer comes out clean when inserted.

For the syrup, combine water and sugar in a saucepan and heat until dissolved, then add poppy seeds.

Once the cake is done, pour the syrup over the cake.
