Preheat the oven or a grill.

Spread the mustard on one side of each slice of bread.

Layer the ham and cheese between two slices of bread, with the mustard side facing in.

Spread the cream on the top slice of the sandwich.

Top with the remaining slice of bread, cream side up.

Sprinkle with piment d’Espelette and nutmeg.

Spread butter on the outside of the sandwich.

Cook in the oven or grill until golden and crispy.
