Pineapple pudding has roots in French cuisine, where it is often enjoyed as a light dessert. Traditionally, it showcases the tropical fruit's sweetness and is a favorite during summer gatherings. Today, variations exist globally, with many cultures adapting the recipe to include local fruits and flavors.
Cut the medium-sized pineapple into medium-sized pieces.
Add the pineapple pieces to a pan with 1/2 cup white sugar and 2 tablespoons water.
Keep the pan on medium heat and stew for 10 to 12 minutes until the water dries out completely, then transfer to a bowl.
In a separate bowl, dissolve 2 1/2 tablespoons gelatin in 1/4 cup warm water without lumps and set aside.
In a pan, add the 390 grams of condensed milk and 1 1/2 cans of water, mixing well.
Heat the milk mixture until it starts to boil around the edges, then gradually add the dissolved gelatin, ensuring no lumps remain.
Remove the pan from heat and let the mixture cool completely.
Once cooled, add about one third of the stewed pineapple to the milk mixture and mix well.
Pour the mixture into a glass dish or individual cups and refrigerate for 2 to 3 hours.
To make the pineapple jelly, add the pineapple jelly to a bowl with 1 cup of hot boiling water and mix well.
After the pudding has set, pour the pineapple jelly on top and garnish with leftover stewed pineapple pieces.
Refrigerate for another 1 to 2 hours before serving chilled.
