Buffalo Mac and Cheese

4 tablespoons butter
almost 3 tablespoons flour
4 ounces cream cheese
2 cups milk
1 tablespoon and a half of seasoning blend (garlic powder, onion powder, black pepper, salt)
1-2 teaspoons prepared mustard
1 cup panko bread crumbs
1 tablespoon olive oil

Melt 4 tablespoons of butter in a pan over medium low heat.

Make a roux by adding almost 3 tablespoons of flour to the melted butter and whisk together.

Add 4 ounces of cream cheese to the roux and break it up to help it incorporate as it melts.

Pour in 2 cups of milk, stirring to combine with the roux and cream cheese.

Add about a tablespoon and a half of the seasoning blend (garlic powder, onion powder, black pepper, salt) to the mixture.

Stir in 1-2 teaspoons of prepared mustard into the cheese sauce.

In a separate pan, melt 1 tablespoon of butter and add 1 tablespoon of olive oil.

Add 1 cup of panko bread crumbs to the pan and toast them until golden brown, being careful not to burn them.

Once the panko is toasted, sprinkle it over the top of the mac and cheese mixture in the baking dish.

Bake in a preheated oven at 350 degrees Fahrenheit for about 30 minutes.
