Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add diced tomatoes and green bell pepper; cook for another 3-4 minutes.
Add lentils, arabic mixed spices, cumin powder, coriander powder, paprika powder, and black pepper; stir to combine.
Pour in vegetable broth (or water) and bring to a boil over high heat.
Reduce heat to low and simmer uncovered until lentils are tender, about 25-30 minutes.
Season with salt to taste and garnish with chopped coriander and parsley leaves.
