Peel the plantains and cut them into 2-inch pieces.

Turn the heat to medium and add enough oil to cover the bottom of the pan.

Wait for the oil to heat up, then add the tocino.

Fry the tocino until it gets nice and crispy, but not too hard.

Remove the tocino from the pan and set aside.

Add extra oil to the pan to cover the plantain pieces halfway.

Fry the plantains for around 5 to 7 minutes, flipping them halfway through.

While the plantains are frying, mash some garlic in a mortar and pestle with a little salt.

Once the plantains are golden, turn off the heat and remove them from the oil.

In a bowl, combine the fried plantains, mashed garlic, and tocino, adding a little more oil if needed.

Mash everything together until well blended.

Transfer the mixture to a plate, shaping it as desired, and flip it over to serve.
