1

Start with a whole chicken cut into 8 pieces (2 legs, 2 thighs, and 2 halved breasts).

2

Preheat a pan on medium-high heat and add olive oil.

3

Dust the chicken pieces lightly with pan searing flour (which contains salt and pepper) on both sides.

4

Sear the chicken pieces in the hot oil until they develop a light crust on all sides.

5

Once browned, transfer the chicken pieces to a slow cooker.

6

Turn the heat down to medium-low and add mirepoix (pre-cut onion, carrots, celery) to the pan.

7

Add 40 whole garlic cloves to the pan and cook for about 10-12 minutes until the garlic is lightly browned and the mirepoix is soft.

8

Add all-purpose flour to the pan and stir to coat the vegetables.

9

Pour in 2 cups of dry white wine and 1 carton of chicken stock, stirring until the sauce begins to thicken.

10

Scrape the bottom of the pan to incorporate the fond into the sauce.

11

Pour the sauce over the chicken in the slow cooker and add bay leaves and herbs de Provence.

12

Cover and cook on low for 6-7 hours until the chicken is tender and falling off the bone.

13

Remove the bay leaves from the slow cooker.

14

Transfer the chicken to a platter and season the sauce with additional salt and fresh cracked black pepper before serving.
