Chicken broth adds flavor without alcohol.

Pat the chicken dry and season generously with salt and black pepper.

Heat olive oil and butter in a large skillet over medium heat until melted.

Sear the chicken on all sides until golden brown, about 4-5 minutes per side.

Remove the chicken and set aside.

In the same skillet, add chopped onion, carrots, and celery; sauté until softened, about 5 minutes.

Add garlic cloves and cook until fragrant, about 1-2 minutes.

Pour in white wine and scrape up any browned bits from the skillet.

Return the chicken to the skillet, breast side up.

Add chicken broth, thyme, bay leaves, and lemon slices around the chicken.

Cover and transfer to a slow cooker; cook on low for 6-8 hours or until chicken is tender.

Remove the chicken and let it rest for 10 minutes before carving.

Strain the cooking liquid and discard solids; return liquid to the skillet.

Simmer the sauce until slightly thickened, about 10 minutes.

Serve the chicken with garlic cloves and sauce drizzled over.
