Peel French shallots and finely slice them.

Add 3 to 4 tablespoons of olive oil to a baking tray.

Add 10 sprigs of fresh thyme and 2 sprigs of fresh rosemary to the tray.

Add 40 cloves of peeled fresh garlic to the tray.

Pour in 1/2 cup of chicken stock, sprinkle with 1/2 teaspoon of salt, and add a couple of cracks of fresh pepper and 3 bay leaves.

Preheat the oven to 180 degrees Celsius.

In a pan over medium heat, add 3 tablespoons of olive oil.

Add 8 pieces of chicken thighs to the pan and sear for 4 to 5 minutes on each side.

Remove the chicken and place it in a baking tray.

In the same pan, add 1/2 cup of white wine and let it simmer for a couple of minutes to cook off the alcohol.

Add the wine mixture to the baking tray with the chicken and garlic mixture, spreading it out evenly.

Cover the tray with foil and place it in the oven at 180 degrees Celsius for 1.5 to 2 hours.

After 1.5 hours, remove the foil and return the tray to the oven for an additional 10 to 15 minutes to brown the chicken.

Serve the chicken with garlic on top, garnished with a sprig of fresh thyme and fresh parsley.
