Chicken broth adds flavor without alcohol.
Cut chicken leg quarters into drumsticks and thighs by finding the knuckle joint and slicing through it.
Marinate chicken leg quarters with olive oil, salt, pepper, and dried thyme.
Sear the chicken in a Dutch oven until browned.
Separate cloves of garlic from 3 heads of garlic.
Boil water and dunk garlic cloves for 60 seconds to help peel them.
Peel garlic cloves after boiling.
Brown the peeled garlic cloves in the Dutch oven.
Add a little flour to the garlic to thicken the sauce.
Deglaze the pan with 1/3 bottle of white wine, scraping up bits from the bottom.
Cube 3 washed potatoes with skin on and add them to the chicken and garlic mixture.
Add a little milk to the sauce, along with more salt, pepper, and thyme.
Combine the chicken, potatoes, and garlic in the Dutch oven and bake in the oven for about 40 minutes.
Cut broccoli into spears and prepare for blanching.
Boil heavily salted water and drop in broccoli, cooking for 1 minute before removing.
Spread butter on bread and toast in the oven just before the chicken is done baking.
Serve chicken with 40 cloves of garlic, blanched broccoli, and toasted bread.
