Roll out the puff pastry.
Cut the puff pastry into four equal rectangles using a pizza cutter.
Dip a brush into an egg wash (egg mixed with milk or water) and brush around the edges of the puff pastry rectangles.
Scoop about a tablespoon of cherry pie filling and place it in the center of each puff pastry rectangle.
Add a pinch of pistachios on top of the cherry filling (optional).
Fold one edge of the puff pastry over to form a triangle and press down to seal the edges.
Brush the entire surface of the folded puff pastry with the egg wash.
Make three slits down the center of the triangle to release air while baking.
Transfer the turnovers onto a baking sheet lined with parchment paper.
Bake in a preheated oven at 375°F (190°C) for about 20 minutes until golden and puffy.
Sprinkle confectioners sugar over the top before serving.
