Matambre a la Pizza

Make a fire for grilling.
Prepare the matambre by seasoning both sides with salt and black pepper.
Prepare vegetables as a side dish: slice onions and potatoes, season with salt, pepper, and olive oil, then wrap in metallic paper.
Place the wrapped potatoes on the grill for approximately 15 to 20 minutes.
Check the matambre for a nice brown color, then turn it over to cook the other side.
Once both sides of the matambre are browned, add tomato sauce and mozzarella cheese on top.
Prepare one matambre with tomato sauce and green onions, and the other with mushrooms and green onions.
Add fresh oregano to the tomato sauce matambre and sage to the mushroom matambre, then drizzle with olive oil.
Cover the matambre with pans to create an oven effect for melting the cheese.
Cook for around 15 to 20 minutes until the cheese is melted and the base is crunchy.
Check doneness by inserting a knife into the matambre; it should go in easily when done.
