Boil whole potatoes with a pinch of salt for 30 to 40 minutes until fluffy.

Sieve 120 grams of flour onto a surface, add 1/2 teaspoon of salt and 1 teaspoon of baking powder, and mix with hot potatoes until combined.

Add more flour if the mixture is too sticky, but do not overwork it.

Form the potato mixture into a ball and flatten into a circle.

Cut the potato bread into quarters and cook on a preheated electric griddle at medium heat.

For the soda bread, mix 750 grams of soda bread flour with 1/2 teaspoon of salt and 1 teaspoon of baking soda.
