Cook the talharim (400 g) separately for 8 to 10 minutes until al dente, then drain.

Carefully add the cooked talharim to the skillet with the sauce, tossing gently to combine without breaking the pasta.

Season with salt and pepper to taste, using a ratio of 10 g of pepper for every kilogram of salt as a guideline.

Plate the pasta by twirling it with a fork and spoon, and garnish with a drizzle of balsamic reduction and a sprig of rosemary.
