Dried herbs are more affordable and have a longer shelf life.

1

Start by gathering your ingredients: light olive oil, garlic, crushed red pepper flakes, rosemary, lemon zest, and Tuscan herbs.

2

Open the light olive oil and measure 1 cup into each of the four pots.

3

For the garlic-infused oil, take one head of garlic, remove the skins, and smash the cloves with the side of a knife to release the oils. Add the smashed garlic to the pot with olive oil.

4

Set the heat to medium-low (around a 4) and monitor closely to ensure it does not boil or fry the ingredients.

5

For the spicy oil, add 2 tablespoons of crushed red pepper flakes to another pot of olive oil and set to medium heat, stirring occasionally.

6

For the lemon-rosemary oil, add the zest of one lemon and 5-6 sprigs of rosemary to another pot of olive oil, heating on medium.

7

For the Tuscan herb oil, add a mix of Tuscan herbs, including garlic, basil, thyme, rosemary, and oregano to the final pot of olive oil, also heating on medium.

8

Monitor all pots, stirring occasionally to distribute the ingredients. Ensure the oil warms up but does not boil.

9

Once the oil starts to warm and the ingredients begin to infuse, set a timer for 30 minutes and keep the heat low to simmer gently.
