Boil beets in slightly salted water for about 25 minutes until tender, then cool.

Shred the cooled beets into a bowl.

Shred 3 pickles and add to the bowl.

Shred radishes and add to the bowl.

Squeeze in 1 clove of garlic.

Add half a teaspoon of salt, half a teaspoon of sugar, and a splash of vinegar to taste.

Squeeze in lemon juice for freshness.

Chop green onions and add to the mixture.

Pour in buttermilk until the desired consistency is reached.

Add dill to the mixture and reserve some for garnish.

Mix everything until well combined and chill in the refrigerator for a couple of hours before serving.
