Rinse 1/2 cup of quinoa with water and drain it.
Place the quinoa in a saucepan and cook on medium heat, stirring constantly to remove the bitter taste.
Let the water evaporate, then toast the quinoa for about 3 minutes until it gets slightly golden brown.
Put the toasted quinoa in a blender and crush it into a powder, or stop before it becomes a fine powder if you prefer some texture.
In a bowl, cream together 1/2 cup of room temperature unsalted butter and 1 cup of light brown sugar using a whisk.
Add 1/2 teaspoon of salt and 2 egg yolks to the butter and sugar mixture, and mix to combine.
Add the crushed quinoa, 1/2 cup of almond powder, 1.5 tablespoons of corn flour, and 1 teaspoon of baking powder to the bowl and mix everything together, but do not over mix.
Add 1 heaped cup of chocolate chips (1/2 cup of dairy-free 60% chocolate and 1/2 cup of 70% chocolate) and mix them in.
Scoop the dough to make small balls and place them on a tray, then cover with film and let cool in the fridge for at least 1 hour.
After chilling, place the cookie balls onto a baking tray lined with baking paper, leaving space between each ball as they will expand during baking.
Bake in a preheated oven at 180°C (360°F) for about 10 minutes or until the edges are slightly golden, being careful not to overbake to maintain chewiness.
After baking, leave the cookies for about 15 minutes as they will be very soft, then transfer them onto a rack to cool completely.
