Melt 3/4 cup of unsalted butter in a bowl.

Add 1/3 cup of dark molasses and 1 cup of packed brown sugar to the melted butter and mix together.

Add 1 room temperature egg to the mixture and beat well. (Tip: To bring an egg to room temperature quickly, place it in hot water for a few minutes.)

In a separate bowl, combine 2 1/2 cups of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of baking soda, 2 teaspoons of ground cinnamon, 2 teaspoons of ground ginger, and 1/2 teaspoon of ground cloves.

Slowly add the dry ingredients to the wet ingredients, mixing well. Be careful not to add too much flour at once to maintain the right texture for gooey cookies.

Roll tablespoon-sized portions of dough into balls and place them on a baking pan.

Bake at 325°F for 9 to 11 minutes, checking at 9 minutes for doneness. The cookies should be soft and gooey in the middle.
