Heat a non-stick pan on medium high for a couple of minutes.
Cut buns in half and butter them thoroughly.
Place the buns on the pan until they reach desired crispiness.
Clean the pan and return it to medium high heat.
Place lunza and/or halloumi on the pan and cook until crispy on each side, then remove from the pan.
Turn off the heat and add a knob of butter to deglaze the pan.
Beat 3 large eggs with a huge knob of butter in a bowl.
Turn on the stove to medium low and whisk the eggs in the pan, treating it like a risotto.
Once the eggs start solidifying, use a spatula to displace them throughout the pan until creamy and luxurious, then turn off the heat.
For the agoro sandwich, spread mayonnaise on the bottom bun, add half of the egg mixture, top with thinly sliced spring onions or chives, and add lunza with a sprinkle of sriracha.
For the ristofano sandwich, place egg on top of the bun and sprinkle generously with dill tips.
