Wash 2 and 1/2 cups kidney beans and add water along with finely chopped garlic.
Boil the beans while prepping other ingredients.
Rinse salted pigtail and salted beef, then boil for 15 minutes to remove excess salt.
Drain and rinse the salted meat, then add to the pot of boiling beans.
Add pimento seeds to the pot.
Cover and cook on very low heat for 1 to 2 hours until meat and beans are soft.
Add jerk seasoning, scallion, thyme, whole scotch bonnet pepper, and salt to taste.
Stir in 1 cup of creamy coconut milk.
Prepare spinners by mixing flour, salt, and water to form a firm dough, then roll into small pieces.
Add spinners to the pot and mix well.
Cover and cook for another 5 to 10 minutes.
