Marinate shrimp with soy sauce and white pepper; set aside.
Mix sauce in a bowl: combine soy sauce, fish sauce, oyster sauce, palm sugar or honey, curry powder, and white pepper; set aside.
Prep vegetables: chop garlic, ginger, and thai chili; dice green beans and carrot.
Cut a whole pineapple in half lengthwise to create a bowl; scoop out 6 ounces of pineapple meat and chop it into small pieces.
Beat eggs with salt and white pepper.
Heat a large wok over high heat; add cooking oil and scramble the eggs until medium cooked; remove from wok and set aside.
In the same wok, add more oil and marinated shrimp; stir-fry until cooked through; remove and set aside.
Add oil to the wok, then garlic, ginger, and thai chili; stir-fry until aromatic.
Add chopped vegetables and raw cashews; stir-fry for 30 seconds to 1 minute.
Add cold jasmine rice to the wok; mix well with the vegetables.
Pour sauce mixture over rice and mix until coated.
Add pineapple, shrimp, and eggs back into the wok; mix everything together for 30-45 seconds.
Add chopped green onions and garnish with cilantro if desired.
