1 tablespoon Ras el Hanout
1 teaspoon cinnamon
1-2 teaspoons paprika
1/2 teaspoon ground ginger
1 chopped onion
1 cup vermicelli (or Fida WA)
1/2 cup green lentils
1-2 tablespoons tomato paste
1 can chickpeas (or dried chickpeas soaked overnight)
salt
pepper
7 cups water
fresh cilantro

Melt butter in a large Dutch oven or soup pot.

Add chopped onions and fry until translucent.

Add chopped mutton or lamb and brown it.

Add chopped tomatoes (or tomato puree) and mix.

Pour in approximately 7 cups of water to cover the ingredients.

Bring to a boil, then lower the heat and let it simmer for 1.5 to 2 hours.

After about 1 hour and 15 minutes, add vermicelli and green lentils.

If using canned chickpeas, add them now; if using dried, they should have been added earlier.

Season with salt and pepper to taste and let cook for another 15 minutes until the vermicelli is done.
